How can I get a DayPilotMenu with a submenu ? is it impossible ?

This is not supported at the moment, unfortunately.

If it's necessary for you, I could add it (but probably not before Feb 2008).

I need it to set different events categories in a submenu, this is a useful functionnality for me.
